BBQ-Kissed Green Lip Mussels

BBQ-Kissed Green Lip Mussels



    1. Scrub and wash mussels to clean and remove their "beards." Discard any mussels that are broken or do not readily open. Dice and prepare dressing vegetables separately.
    2. Replace one cooking grate on your grill with your griddle plate and preheat the grill to medium-high heat. Place mussels on the plate and cook 2 - 4 minutes with the cover closed.
    3. While mussels cook, heat butter in a small pan and mix in remaining ingredients.
    4. Turn off the grill and squeeze lemon juice and dash salt and pepper into open mussels. (Discard any unopened mussels.) Reserve a small bit of salt and pepper, spoon dressing into opened mussels, and lightly dash a second time on top. Serve quickly with warm bread and butter.
