Cedar Planked Shrimp

    1. Soak the cedar plank and the bamboo skewers in a container of cold, salted water for at least an hour.
    2. Melt the garlic butter in a small pan and keep warm.
    3. Slice one lemon into quarters. Cut the other into 1/8 inch slices.
    4. Light your grill and set it to high heat.
    5. Take the cedar plank out of the water, drain it and coat the top with the olive oil. Place it on the grill over the direct, high heat to get warmed up and steamy.
    6. Take the skewers out of the water and thread 4 of the shrimp on each one. Place one of the quartered lemons on the end of the skewer.
    7. Lay the lemon slices on the hot plank and give each skewer a coat of the melted garlic butter.
    8. Place each skewer of shrimp & lemon on the bed of lemon slices on the plank. Close the lid and let them steam in the cedar and lemon smoke.
    9. Baste often with the remaining garlic butter. They should be done in 12 to 15 minutes.
