Cedar Smoked Salmon

This is a great BBQ recipe to use when entertaining friends or for a relaxing warm summer evening spent on the patio.

    1. Soak the cedar plank in water for a minimum of 3 hours (to avoid catching it on fire while on the BBQ) AND preheat the BBQ to a medium setting.
    2. Zest the lemon and set the lemon aside.
    3. In a small bowl, mix the lemon zest, chopped dill, a pinch of coarse sea salt and freshly ground peppercorn together.
    4. Rub the ingredients on both sides of the salmon fillets and let stand a few minutes.
    5. Cut the remaining lemon and squeeze some of the juices over the salmon.
    6. Place the salmon on the cedar plank.
    7. Place the cedar plank on the mid to top rack of the BBQ. (The objective is to get a good "smoky" flavour into the salmon not overcook it).
    8. When the salmon becomes a nice light pink colour and flaky it is ready! (Approximate timing 10 ¤ 15 minutes).
