Grilled Swordfish with Gar-Di-Li Sauce

Grilled swordfish brushed with olive or wasabi oil topped with reduced garlic, (lemon or) lime, dill, sherry and butter sauce.

    1. Prepare sauce ahead in small cast iron skillet on back of grill and keep warm and waiting for grilled fish. Melt butter and add garlic and saut? for several minutes until aromatic. Add sherry and reduce by half. Add dill and lemon juice several minutes before serving.
    2. Submerge or brush oil of choice to all sides of swordfish portions.
    3. Medium flame, lid down after turning. Direct rack about 3 minutes each side on medium heat until done, brushing with remaining oil to top side of fish at turning (do not overcook). Place all portions on platter and pour prepared sauce evenly over fish and serve.
