    1. Pre-heat the BBQ. Cut the onions into rings and dice the 3 peppers into cube size morsels and toss into a grilling pan (pre-greased with Pam). Add the butter, celery, garlic, white wine and dehydrated chicken stock. Stir.
    2. Turn down the BBQ to medium low. Simmer until onions are softened and the liquid has saut?ed down to 1/3. Add in the shrimp, scallops and pine nuts. Stir. Cook for approximately 3 minutes, stirring often.
    3. Turn off the BBQ burner and add in the dill,lemon and pepper. Stir. Add in the cherry tomatoes and combine before serving on a bed of Minute Rice.
