    1. Liberally cover the fillets with oil and spice mix on flesh side.
    2. Make sure grill is hot! Slap the fillets flesh side down on the grill listen to the sizzle for about 45 seconds. Slide a spatula under the fillet and turn at a right angle for another 45 seconds. This gives the top of the fish a nice 'grilled' pattern and sears the herbs to the fish.
    3. Flip the fillets skin side down. The layer of fat beneath the skin burns away, cooking the rest of the fillet without burning or drying. You can tell its done when you can flake away a nice piece. Don't worry about over cooking!
