BBQ Thai Strips



    1. Cut pork into long strips, about 1 inch (2.5 cm) wide. Place pork strips in a shallow dish. Insert fork into lime wedges and squeeze juice over meat.; lay squeezed lime wedges over meat.
    2. Combine green onion, garlic, oil, hot pepper sauce, peanut butter, brown sugar and crushed chillies; stir and add to meat. Marinate at least 20 minutes or overnight for stronger flavour.
    3. Thread meat onto wooden bamboo skewers (that have been soaked in water); place a lime wedge on tip of skewer. Barbecue or broil 4 - 6 inches (10 - 15 cm) from heat 3 - 4 minutes. Brush with extra marinade. Turn skewers over and cook 3 - 4 minutes more. Serve hot over a bed of shredded lettuce and shredded carrots. Garnish with green onion curls and thinly sliced cucumber. Serve with hot dipping sauce.
