Barbecued Holiday Ham

This savory, smoked ham is a real treat to end the year and a delicious way to feed all your holiday guests.

Barbecued Holiday Ham



    1. Soak smoking chips in brandy in a non-reactive metal dish for one hour.
    2. Preheat covered barbecue to a medium heat. Place dish with smoking chips on barbecue grill, cover barbecue with lid and heat for 5-10 minutes or until liquid is hot.
    3. Prepare the ham by cutting the skin in diamond patterns with a sharp knife, placing the clove stems in the intersections.
    4. Mix the brown sugar, cinnamon and apple sauce in a bowl and baste the ham thoroughly.
    5. Place the ham on a roasting tray so that there is a surface between the grill and the ham to catch any excess drippings.
    6. Place the tray over the barbecue, cover barbecue with lid and smoke, basting ham frequently and adding brandy to dish if necessary, for 2 1/2 - 3 hours or until ham is cooked.
