Cathy\'s Kick in the Pants BBQ Ribs

This recipe, although a little time consuming, is easy and produces sensational, fall off the bone, juicy ribs. You will taste a layering effect that is truly palate pleasing.

    1. Pour applesauce into medium-sized saucepan and place over medium heat on your side burner of your grill. Add the can of chipotle peppers to the applesauce and stir to combine. Cook over medium heat for 15-20 minutes. Remove from heat and let cool. After cooled, place in your food processor and pulse 8-10 times until the mixture is semi-smooth, with small pieces of the pepper still in the sauce. Set aside until ready to baste the ribs.
    2. Cut each slab of ribs in half. Fill a large stockpot with enough water to cover the ribs and place on your side burner of your grill. First, add to the water the salt, peppercorns, apples, onions, garlic and fresh thyme and stir to dissolve the salt. Next, place the ribs into the water and bring to a boil. Turn down your heat to low, and simmer the ribs for 1 hour. Remove the ribs when done from the water, set aside to cool to the touch, approximately 15-20 minutes.
    3. Preheat your grill to 300 degrees. While preheating, make dry rub by mixing together the dried thyme, oregano, garlic powder, salt and freshly ground pepper. Coat both sides of ribs with olive oil. Sprinkle the rub onto both sides of the ribs, pressing in with your fingers. Place the ribs onto the preheated grill and grill both sides with just the rub for five minutes on each side. Next, take the apple-chipotle sauce and brush on the top side of the ribs. Grill for five minutes, turn, and baste the other side. Repeat this step one more time. Last, baste the ribs with your favorite BBQ sauce, and continue cooking and turning 2-3 times, for approximately 15-20 minutes. Serve with your favorite BBQ sauce on the side.
