Uncle Herb\'s Smoked Christmas Ham

Holidays are here and Uncle Herb has been eyeballing that gorgeous Vermont Castings bbq smoker out back. He could never settle for plain-old, reheated ham for dinner and neither should you!

    1. The night before dinner, mix the rub ingredients together and coat the ham. Refrigerate in a sealed pot overnight.
    2. The next day, remove the ham from the refrigerator and pot and prepare the baste separately in a small pan on your stove-top.
    3. Prepare the smoker. Begin smoking at 215 degrees Fahrenheit (100 Celsius). If you choose to raise the temperature, do so as gradually as possible. Stop smoking after approximately 6 hours or when the temp at the center of the ham has reached 145 degrees Fahrenheit (62 degrees Celsius).
    4. Mix the basting ingredients and baste just before the last half hour of smoking.
    5. Score the ham and garnish with pineapple, cherries, cloves and serve!
