Directions

    1. Cut a pouch into the poultry breast and season with all the spices inside and out then insert ¼ of the shallots in each breast, followed with the asparagus tips and three slices of hard cheddar.
    2. Close pouch you created and wrap the breasts in the swiss cheese and the prosciutto slices. Create a pouch with the phyllo pastry to put the breasts in, one per pouch (approximately 3 wraps per pouch with a little butter between each layer). Add ¼ of the chicken stock and the same amount of béchamel sauce before sealing the pouch closed, basting pouch with egg wash. Reserve and warm the rest of the béchamel. You may flavour the béchamel with some chicken stock or leave it plain.
    3. Prepare BBQ to cook indirect heat at about 200 °C with the lid closed for about 2½ hours or until cooked internal temp of meat at 180°C. Remove from grill and let cool for about 15 min. Presentation should be on a leaf of lettuce and covered with the reserved béchamel.
