Caribbean Chicken with Pineapple-Cantaloupe Salsa

Directions

    1. Preheat grill to medium.
    2. In a small bowl, combine first four ingredients and 1 teaspoon (6 g) of the salt and stir until evenly mixed. Stir in oil to make a paste. Brush mixture on both sides of chicken. Place cantaloupe cubes in medium bowl along with pineapple, lime juice, mint, and remaining salt.
    3. Grill chicken for 7 to 8 minutes on each side. Serve right away topped with salsa or refrigerate overnight. Mint will darken as it stands, so if making ahead of time, add mint just before serving. Vermont Castings Modern Grilling © 2007 Quarry Books
