Cast Iron Chicken

This is a flavorful chicken recipe that is quick to prepare and is always a hit.

    1. Rinse Chicken and pat dry. Lay breast side down and, using kitchen or poultry shears, remove the spinal column. Place chicken breast side up and press on breastbone until it snaps and the chicken is lying semi-flat.
    2. Combine marinade ingredients (all but chicken in a bowl and combine). Place chicken in a 1 gallon plastic bag with marinade and marinate for 1–4 hours. If marinating longer than 4 hours, you may want to reduce the amount of lemon juice used.
    3. Preheat grill to 400 degree range. Clean and oil grates. Wrap either a brick or a large cast iron skillet with foil. Place the chicken breast side down on the prepared grill surface and then place the skillet or the bricks on the top side. The objective is to use the combination of the weight and the heat of the grill to crisp the skin while keeping the bird moist.
