Erny\'s Spiced Apricot Chicken

Directions

    1. Clean chicken inside and out. Salt the inside of the bird. Assemble your chicken on the rotisserie according to the manufacturer's instructions. Preheat barbecue to 300 degrees. On bottom of barbecue I like to put a tinfoil pan with water in it to keep the bird from drying out. Place bird in the rotisserie motor and cook for about an hour or until the bird is almost cooked.
    2. I use about 1 cup of the jam and add 3 teaspoons of honey and 2 tablespoons of cayenne pepper. Add a couple of drops of soy sauce and mix well. You can add more or less of the ingredients for a sweeter taste or a hotter taste. Taste before using and adjust to your liking.
    3. Brush the bird with your sauce and cook for a few more minutes. Brush again making sure you get all of the skin coated. Repeat until your bird is cooked. When the bird is done remove from the barbecue and set aside covered loosely with tin foil for a few minutes to allow the flavor to permeate through the bird.
