Grilled Lime Chicken with Corn-Pepper Relish

Ingredients

Directions

    1. Dice vegetables and combine with oil, cilantro, red pepper flakes, and salt and pepper in a medium-size bowl. Cut and squeeze 2 of the 3 limes into the mixture.
    2. Squeeze and rub the leftover lime onto chicken breasts. Cook the breasts on a gas grill at medium-high heat, turning once at 5 - 7 minutes a side.
    3. Pepper and salt chicken breasts to taste and dress with relish. Serve with red or black beans and rice.
