South Pacific Chicken Skewers

This is a great recipe for a party or a bbq gathering. I made this recipe for my parents' 50th Anniversary Luau and everyone absolutely loved the skewers.

Ingredients

Directions

    1. Put all marinade ingredients in a blender on pulse until thoroughly blended. Makes about 3/4 cups. Cut chicken fillets into 2 inch strips and marinade in ziplock bag 12-24 hours.
    2. Drain chicken and thread one 1 inch chunk of pineapple on an 8 inch skewer all the way down to the end of skewer, then thread chicken on, and finish with another chunk of pineapple.
    3. Grill over hot coals until done (3-5 minutes per side).
