Smooth Tomatillo Salsa



    1. Preheat grill to high with a smoker box in place.
    2. Place the tomatillos, still in their husks, in a plastic bag and fill the bag with water. Seal and allow the tomatillos to soak for about 15 minutes.
    3. Remove the tomatillos from the bag and place them on the grill. Grill for 15 to 18 minutes, turning frequently. (The husks will char slightly, but they should not totally blacken.) Remove the tomatillos from the grill and set aside to cool.
    4. When the tomatillos are cool enough to handle, remove and discard the husks and place the tomatillos in a food processor. Pulse to chop and add the onion, cilantro, lime juice, jalapeño chile, garlic, and salt. Puree until smooth. Transfer to a serving bowl. Vermont Castings Modern Grilling © 2007 Quarry Books
