Asparagus Wrap

Great veggie side dish for chicken or meat.

    1. Blanch the asparagus for 3 to 4 minutes in a pot of salted water on the side burner. Remove from heat and cool down the asparagus in cold water and pat them dry.
    2. Start up the BBQ to medium heat. Take a slice of prosciutto and 4-5 pieces of asparagus, 3-4 slices of red pepper and 3-4 slices of yellow peppers and roll together. Secure each bundle with a toothpick to keep the roll together.
    3. Mix together the lemon juice, butter and your favorite BBQ sauce. With a spoon, drizzle over each bundle (you can do this ahead of time). Place on the BBQ and cook for a couple of minutes on each side (more and the BBQ sauce will likely caramelize and burn). Remove from heat, drizzle on the rest of the sauce, sprinkle on the cracked pepper and serve hot.
