Asparagus and Apricot Cream Cheese Roll-Up

Asparagus rolled in a Black Forest ham slice with apricot is a great blend of flavors. A slight edge with the country style Dijon.

Ingredients

Directions

    1. Blanch the asparagus for about 2 minutes. Remove to an ice bath and completely cool. Set aside.
    2. Combine the cream cheese, lemon juice, apricot preserves and Dijon. Blend well.
    3. On 1 slice of ham, spread a little of the cream cheese mixture. Lay 1 asparagus spear across the top of the ham slice. Place a row of thinly sliced dried apricot along the asparagus. Roll tightly. Place 4 toothpicks through the ham and asparagus. Cut into about quarters. Trim ends. Place on a decorated platter and serve.
