Green Onion Cakes

This is a bread-like pancake that is made with green onions (scallions) and then fried to a golden brown.

    1. Make Dough: in a medium bowl, stir together flour and yeast. In a small pot over medium heat, warm olive oil, honey, and water until hot to the touch. Dissolve salt in the hot liquid, then stir into flour until a soft dough forms. Knead 5 minutes, adding flour if necessary. Lightly oil a clean bowl, put the dough in, cover with a tea towel, and let rise 30-45 minutes in a warm place.
    2. The Assembly: Cut dough into 6 pieces, shape each into a ball, flour balls and let rise 5 minutes. In a small dish, combine olive sesame oil. Set aside. Put a little olive oil in a cast iron frying pan and heat to medium high. Roll out one of the dough balls to about 8 inches in diameter. Brush with some of the sesame flavored oil, sprinkle with about 1 tbsp. green onion, and roll up jelly-roll fashion. Turn the whole thing sideways and roll up again so that you have a snail shape. Flatten with the heel of your hand, then roll it out gently until you have a circle again, about 5 inches in diameter. Put cake into pan, cover and cook until brown on both sides, turning once (about 5 mins.).
    3. Cut up these "pancakes" and serve them with a Chili-Garlic paste or a dipping sauce made with equal parts of lime juice, soy sauce, and Franks hot sauce.
