Grilled Artichoke

Grilling artichokes produces a wonderful nutty flavor.

    1. Trim top and stem of artichoke and place in a pot of cold, salted water and bring to a boil. Boil for 25 - 30 minutes until artichoke is par-boiled (tender but not fully cooked).
    2. Remove and drain artichokes. Lay them on a cutting board and slice them in half vertically. Scoop out thistles in center with spoon. Drizzle each half with EVOO and sprinkle lightly with salt and pepper. Wait 5 - 10 minutes (long enough for the EVOO to be absorbed) and grill cut side down over medium direct heat for 3 - 5 minutes until grill marks are well defined. Flip the artichoke and finish for 3 minutes.
    3. Enjoy with your favorite dip. We sometimes prepare extras and chill them to serve cold with a nice homemade aioli.
