Ingredients

Directions

    1. Pre-heat grill to medium. Wash and peel yams or sweet potatoes. Slice into 1/4 inch discs and toss with oil, salt and pepper.
    2. Heat orange juice to gentle simmer. Add brown sugar and maple syrup and reduce until slightly thickened. Swirl in butter to melt and reduce heat to keep warm.
    3. Grill yam or potato rounds until well marked and tender (approximately 5 minutes per side). Vegetable is done when a fork is easily inserted. Remove to serving platter and drizzle sauce evenly to cover. Serves well hot or at a warm room temperature.
